I’m the type of eater that repeats a meal I love, over and over again. I was in Whole Foods thinking of getting some vegan chocolate chips to put in my banana bread, then a lightbulb went off in my head. CHOCOLATE CHIP PANCAKES! I’ve never made them before, and honestly, I just started to make pancakes (with flour) about 2 months ago. Before I took animal products out of my meals, I used to make 2 ingredient banana pancakes literally everyday, using just 1 banana and 2 eggs. I actually thought I was eating healthy. LOL.

Enjoy Life Semi-Sweet Chocolate Chips

Any who, I found this Birch Benders pancake mix a few months ago when my husband wanted to make fried oreos and I love the batter and it doesn’t have 5000 ingredients.

Birch Benders Classic Pancake Mix

The mix is organic, vegan, and kosher, and only requires water. I actually use almond milk instead of water to make it a little fluffy. I add in a handful of chocolate chips and add pecans into the ones for me (husband hates them). After I mix everything, I heat up my griddle, that I paid about $20 for at Target. It’s a non-stick griddle, but if I don’t use oil, I have a fear that something will still burn. I finally bought a vegan butter, since butter seems to be something my husband cannot live without. I put a little of that on the griddle and used a small measuring cup to pour batter, making about 7 pancakes.

They are easy and quick to make, and super delicious. I’ve made them 3 days in a row now. I will probably continue to make until I’m out of ingredients, and on to my next favorite meal. Another good thing about pancakes is that you can eat them any time of the day. These also make for a nice dessert! Not bad for a “vegan meal”. There’s myths that vegan food is nasty but honestly, if I didn’t tell my husband it was vegan, he wouldn’t know because you can’t taste a difference. It’s delicious!

Ingredients:

  • 1 cup of Birch Benders Pancake Mix
  • 3/4 cup of Califia Farms Unsweetened Almond Milk (or water/another milk of choice)
  • 1 palmful of Enjoy Life Semi-sweet Chocolate Chips
  • Maple syrup

Directions:

  1. Blend pancake mix with almond milk until well blended and creamy.
  2. Add in chocolate chips or other toppings.
  3. Place in heated and greased skillet or griddle.
  4. Flip once cooked on one side, and serve with browned on both sides.
  5. Drizzle with maple syrup.

  1. Your pancakes look delicious and fluffy. Earth balance is a good brand and butter substitute. I am not a complete vegan, but I do enjoy eating vegan foods whenever I can. I will look out for Birch Benders next time I’m at Whole Foods.

    1. They were really good! You should try it. There are many vegan items to try that non vegans can enjoy. I have to find those items since my husband is like you. He’s just not really for the big step lol
