people I think of eating healthy, people I think BOOOOORING! I’ve learned that I don’t need to eat oatmeal for breakfast and salmon w/veggies for lunch and dinner all of the time. I have always said I will not eat the same meals everyday, again. I did it when I first changed my diet from Louisiana goodness fattiness when I moved to Atlanta. Although I was the skinniest I’ve ever been in life, that was a rough time so it could’ve been due to multiple things….that’s a story for another time. Any who! I’m loving Pinterest for meal ideas. (Follow me! @sweetsummerdaze) One thing that stood out to me was zucchini boats!
This goodness is filled with ground turkey breast, black beans, corn, red bell peppers, and onions! I cook a pound of turkey breast seasoned with pepper and a dash of cayenne (I put cayenne on EVERYTHING!) I love spice. After the turkey breast is cooked, I mix in a pound of cooked black beans, corn, peppers, onions, and a dash of shredded cheddar cheese. Grease the pan with oil. I slice about 4 zucchini sticks in half (and get the insides out with a spoon). I sprinkle a little salt, pepper, and cayenne in the boats, then put the mixture in. Place the boats in the pan, sprinkle a little more shredded cheese on top (I use both mild cheddar and monterey jack), cover with foil, and bake at 350 degrees for about 15-30 minutes, depending on how soft you want the boats.
Yes, I could’ve done without the cheese, but I’m not giving up cheese lol. I just put in an extra 15 in the gym :).
